Corned Beef & Buttery Mashed Potatoes



The tender corned beef and creamy mashed potatoes in this recipe make for a hearty and comforting meal. It's great for a cozy dinner at home or a special event.

Ingredients:

  • 2 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 1/4 cup unsalted butter
  • Salt and pepper to taste
  • 1 can corned beef, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1/2 teaspoon dried thyme
  • 1/2 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions:

In salted water, boil potatoes for about 15 to 20 minutes, or until they are soft

Put the potatoes in a bowl and add milk, butter, salt, and pepper

Mash the potatoes until they are smooth

Stay warm

Put olive oil in a pan and heat it over medium-low heat

Put in the onion and garlic, and cook until the onion is soft

Put in the chopped corned beef and thyme

Cook until everything is hot

Add the Worcestershire sauce and beef broth and stir

Let it cook for 5 minutes

Add the cornstarch slurry and stir the mixture until it gets thick

Put corned beef on top of mashed potatoes with butter
