Monster Tex-Mex Chicken Sliders



These Monster Tex-Mex Chicken Sliders are a fiesta of flavors packed into mini sandwiches. With a blend of ground chicken, veggies, and Tex-Mex spices, they're easy to make and perfect for a quick dinner or party appetizer.

Ingredients:

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup corn kernels
  • 1/4 cup black beans, drained and rinsed
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 12 slider buns
  • Sliced cheese optional
  • Sliced avocado optional
  • Sliced jalapenos optional
  • Lettuce leaves optional

Instructions:

Put onion, red bell pepper, corn, black beans, chili powder, cumin, garlic powder, salt, and pepper in a large bowl

Add the ground chicken and mix it all together

Mix everything together well

Make small patties out of the mixture that are the right size for the slider buns

Set the pan on medium heat and cook the patties for four to five minutes on each side, or until they are done

In a skillet or toaster oven, toast the slider buns until they are just barely golden

Put a chicken patty on the bottom half of each bun to make the sliders

If you want, you can add extras like sliced cheese, avocado, jalapenos, and lettuce

Use a toothpick to hold the other half of the bun on top

Enjoy while hot!
