Vegan Taco Lettuce Wraps



Instead of regular tacos, try these Vegan Taco Lettuce Wraps. They taste great and are good for you. Because they are high in protein, fiber, and vitamins, they are a good meal for both vegans and non-vegans.

Ingredients:

  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/2 cup diced red onion
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 8 large lettuce leaves, washed and dried

Instructions:

In a large bowl, mix together quinoa, black beans, corn, bell pepper, red onion, avocado, and cilantro

Add cumin, chili powder, garlic powder, paprika, salt, and pepper

Stir until well combined

Scoop the mixture onto each lettuce leaf, dividing evenly

Wrap the lettuce around the filling, securing it like a taco

Serve immediately, optionally with salsa or guacamole on the side
