A refreshing and flavorful Thai shrimp salad with a tangy dressing, crunchy vegetables, and aromatic herbs.
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 cups mixed salad greens
- 1 cucumber, thinly sliced
- 1 carrot, shredded
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup peanuts, chopped
- 1 red chili, thinly sliced
- 2 cloves garlic, minced
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
Instructions:
Get a small bowl and mix fish sauce, lime juice, brown sugar, garlic, and chili together with a whisk
Put vegetable oil in a pan and heat it over medium-high heat
It will take about two to three minutes on each side to cook the shrimp until they are pink and fully cooked
Put salad greens, cucumber, carrot, cilantro, mint, and peanuts in a large bowl
Put the cooked shrimp in the bowl and then pour the dressing over the salad
Carefully toss to mix
Serve right away, and if you want, top with extra peanuts, cilantro, and mint
